You just cut it into cubes and bread it. More info here
My only extra tip is that you marinate it and tap it dry before breading! That way the interior is more flavourful, although it was great for me either way, since I’m a big texture person.

What did you cover the tofu in?
The tofu was breaded with a water + flour + spices batter and some corn “flakes”.
As other commenters said, a better name might be carrot gnocchi, very chewy and simple to make.
Nice! Feels like it’s missing some sauce though.
I took the picture right before adding some teriyaki on top of the tofu!
And the celery added some humidity as well.
