    I don’t particularly enjoy the raw, default flavor of tofu either. If it’s fried, then it’s fine, although it tends to become too dry when you fry it all the way through. But people raving on about it just taking on any flavor, that doesn’t work for me, because I always still taste that default flavor.

    To be fair, I haven’t mastered tofu yet, nor have I found it at a restaurant (not that I’ve been looking). But yeah, for so many dishes I find white beans fill the same role and they just taste better to me.
