I used to work in a restaurant a few years ago and we did a large vegetarian/vegan menu roll out. Won awards, lots of coverage, was hugely successful in attention and praise, but sales wise it was a flop. As time went by, we slowly removed a thing here, a thing there, and no one complained.
The real issue is that the plant-based (vegan) foods are being asked for a very vocal, very tiny market segment.
They are falling because nobody buys them.
