My husband’s training as a butcher, and he’s transitioned to about 80% plant based meals since we got married, just because it’s cheaper, healthier and just as enjoyable. Seeing the difference in price without a reduction in quality has convinced him to operate as a plant based butcher and switch to fully plant based food after his training is finished (though that’s partially also a product of literally seeing how the sausage is made).
If simple exposure to the horrors of meat processing and the benefits of plant based alternatives can convert a German butcher, it should work for most people.
