Veganism does not view humans as morally superior to animals.
Why is the focus on human diet and behavior?
We focus on communicating with humans because we share the same language, which gives us a chance to persuade them.
That said, we don’t ignore the suffering that other animals can cause. But strategically, our main focus is on humans. Once all humans become vegans, we can better explore peaceful ways to address harm caused by other animals.

Well, you’re basically in the same situation as kids who have non-vegan parents forcing them to eat meat.
I don’t know in what jurisdiction you are, but in some places, they definitely have to accommodate for religious reasons, for example. You could attempt to inform them; in some cases, it might help change their minds.
But yeah, if they truly want to force you to do something and have a large number of people surrounding you, there isn’t much you can do on a practical basis, regardless of whether you are in the right or not.
