I know that this may be an unpopular opinion, but when I’m done, I take them apart and put them back in the box to do later, like a jigsaw puzzle.
Seems like the most realistic way to manage them to be honest
Cry a bit, get depressed that I don’t have space to show off Lego, buy more Lego as therapy, repeat.
In reality, I’ve been putting up shelves as fast as I can, but it’s not fast enough.

Some shelves are more packed than others
My wife has a rule that I can’t get a new set until I have a place to put it. In reality this turns into not building a set I already bought until I squish together more sets on a shelf somewhere so my displays look crowded and unorganized.
I did start taking my smaller Star wars ships to my office at work to put there and that cleared out a good bit of space, but not really enough for another UCS build.
I take them apart and build new creations. Some of the smaller sets I might keep together like the Speed series, but for the most part the fun for me is building and creation, not collecting.
